Its normal attacks are piercing and clawing attacks on all at melee range. It tends to use several of these in swift succession and then follow them up with a Circular, a Special Attack that is a whack on the head with its tail. If it is at a distance, it may use Hole Shot, in which it curls into a ball and then rolls through targets in a line.
The Sorbie is the first new type of regular opponent in a while, so it may take the player a bit to adjust to its attack pattern. Other than that, it really isn't too challenging an opponent. Its normal attacks can be somewhat difficult to Guard against, but the Circular at the end is generally an easy Guard, as well as the Hole Shot. Its dark form, Ice Melody, is less challenging, but there is little point in trying to get it to morph into this, as the Sorbie gives more EXP and is not difficult to defeat at all. If the player obtained the Werewolf Choker from the third fight with Dolce and her crew, Allegretto can easily take one of these out in one turn if it's equipped on him. The other team members can easily tag up on another and take it out. If using Viola, she will probably do better as a melee attacker against these, with a series of normal attacks to build up Echoes.
